Spring Time Is Coming!!!

Since there was one beautiful weekend of spring like weather. Patrick decided to plant a flower bed. Even though he picked the weekend with 50 degree weather.

So after he dug all day in the flower bed I decided to grill out. I was surprized that I didn't burn
ONE THING. (That is a first for me and the grill-no little man lives in my grill)


Now that I've seen this food. It is time to cook supper. Till next time.

Remember When

Last night I had a flash back. Due to work, I had to go to a meeting last night. So I asked my parents to come a hangout with Kylie and Ashton. Mom came over after school and I left for the meeting. My dad came over with Chick-fil-A and had dinner with the girls. Ashton had softball practice so my dad was asked to take her. They went on their merry way and came back with many stories. One being...

Ashton came up to me and whispered in my ear. "Pawpall told me to not tell you we stopped for Ice Cream."

Knowing where the ball fields are and the distance to Baskin Robbins I had already figured it out that they would stop. There were many days after ball practice that dad and I would stop by BR to get a treat before we went home. Mom always knew that we did but just let us have our moment. The rule is you have to finish before we get home and mom can't find out.

I remembered some past-times with dad. Here are just a few...

Showing the team how to slide. Not realizing he knocked me 10 feet off the base. But I didn't drop the ball.

Going to Greers Ferry just to knee board on a pretty day. Don't forget to look back to see if they dropped the rope.

Six Flags and the Bungie Swing.

Many talks about if someone had ever touched the top of that tree.

Spitting seeds as high as you can out of the jeep.

There are many more but I'm laughing my head off.

I pray that everyone has a best friend like I do. He is my dad.

I will always be a daddy's girl.

Thoughtful Thursday

After yesterday I thought today would be a good day to express some of my thoughts.

The past few weeks I have been emotionaly drained or what you would call a rut. It could be from an incidental run in with someone who I rather had not talk to, many friends who have lost a loved one, sickness in our family, or just feeling like I'm running 90 to nothing.

Yesterday I got a call at work from a lady at church and she asked what I was doing after work. I replied by saying going and getting the girls then heading home. She asked if she could meet me and bring our family dinner. In my mind I thought phew what a blessing.

I met her at Kylie's daycare and she loaded my car with spaghetti, salad, bread and the most awesome chocolate chip pie. She said she remembered how it was being a young working mom and trying to get everything ready before church. She is such a blessing.

Then last night we were about to leave to go to church and Patrick (who is sick with strep) was watching the news. He said I might want to wait cause a HUGE storm is coming this way. Then my phone rang, it was dad. He asked where I was and said if I could stay at home. The storm had already hit close to my aunts house in Benton and was headed towards us. I decided that I rather not endanger my children and myself. We stayed at home close to the safe room.

In all my thoughts were I am so blessed to have a wonderful friend to bring us dinner, a husband who build us a safe house to keep us dry, and a father who still calls just to make sure we are safe.

Yummy yummy

I got that feeling of something new. So I took some friends recipes and got Ashton in the kitchen. The first recipe we did was a Broccoli Salad that a lady at church makes.
1 head of Broccoli
1 head of Callaflower (sp)
1 Red Onion
4 Bacon slices cooked
Cheese (cubed)
Yellow Raisins
1 C Mayo (I used Mirical Whip)
1/4 Red Wine Vinager
1 C Sugar
Chop the broccoli, callaflower, onion and bacon and place in a bowl. Mix in cheese and raisins. Mix mayo, vinager and sugar together well. Mix the sause in and let cool for 1 hour. 

The next recipe I tried is Stawberry Cake Balls. The kids and Patrick LOVED them.
 

These are made with Strawberry cake and Cream Cheese icing dipped in White Almond bark. Ashton added the sprinkles.

1 box cake mix (cook as directed on box for 13 X 9 cake)
1 can frosting (16 oz.)1 package almond bark (white or chocolate)wax paper
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can frosting.
3. Roll mixture into quarter size balls and lay on cookie sheet.
4. Chill for several hours.
5. Melt almond bark in microwave per directions on package.
6. Roll balls in chocolate and lay on wax paper until firm.
(Use a spoon to dip and roll in chocolate and then tap off extra.)
I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It’s easier to work with when it’s hot.

Tonight I'm gonna try and make Yellow Cake with Chocolate Icing. Then dip some strawberries in the leftover Almond Bark.

Now that I've looked at these treats I'm headed home to make some more.

Not me Monday

Well many people post a Not Me Monday. I will have to say that I can't remember what I did this morning so it is hard to do a not me Monday. So here it goes...

1. It was not me who bought two different sizes of the same pants so I wouldn't go home to try them on.

2. It was not me who opened the bag of cheetos just to make it through the grocery store.

3. It was not me who went to the George Strait and Reba concert and acted a fool.

4. It was not me who pictured herself in that red dress or dreamed that he was singing that song to me.

PMS

Not sure if any family goes through PMS but I think a few of us did last night. Before you say "Oh Erin you don't need to be talking about this". I will say it...

My HUBBYSON goes through PMS at times. I will explain. Hubbyson is my name for Patrick, he is my husband that acts like my son at times. I am very blessed and he is my rock. BUT all males go through PMS. Yesterday was the case. You ask, "What is PMS? I hope your not talking about the girl thing." Nope it is PRE MANLY SYNDROME. The barometric pressure had to be out of wack because he was pissy. Not only was he going through this but a few of my friends said that their husbands were acting the same. So I'm passing out the Midol and you better get your big boy panties on cause this aint working.
